Gingerbread French Toast with Eggnog Syrup

I was in my local bakery yesterday and saw huge fresh loaves of Texas Toast just begging me to take them home....so I am making one of our all time favorites this morning....Gingerbread French Toast with Eggnog Syrup!  I don't think there is anything more Christmas-like than gingerbread and eggnog...and this recipe perfectly blends both on one delicious plate.


Gingerbread French Toast

1 loaf of Texas toast
3 eggs
4 cups of Gingerbread Eggnog
1/4 Teas.Nutmeg
Real Vanilla 


Pour eggnog into blender, add eggs, nutmeg and vanilla. Blend until smooth.  Pour into a wide open bowl or pie plate.  Heat griddle to 350 to 400 degrees.  Spray with non stick spray or use butter to keep bread from sticking.  Place a slice of bread into the mixture and coat.  Place on griddle until light golden brown and then flip and repeat for the other side.  

When both sides are golden brown take off griddle and butter.   I keep mine warm in a 200 degree oven in a glass tray until they are all done.


 Eggnog Syrup

1 cup of eggnog
1/2 cup of butter
1 cup of sugar
2 teaspoons of corn syrup
1 teaspoon of vanilla

Heat until butter is melted and all ingredients have blended together.  Simmer on a med to high heat, stirring often until it bubbles for 10 minutes.  Remove from heat and add 1 teaspoon of baking soda.  This creates a foamy wonderful texture to the sauce.  This is absolutely heavenly.
