Irish Soda Bread - My Saturday Breakfast

There’s something about Saturdays that feels a little softer. The pace of the week finally slows, sunlight peeks through the kitchen window, and I can linger a little longer over a warm cup of tea. And if you peek into my kitchen on a Saturday morning, you’ll most likely find a loaf of Irish Soda Bread cooling on the counter.


This bread has been a favorite of mine for years—simple to make, but it tastes like something special. It’s tender, just sweet enough, with bursts of raisins in every bite. The smell that fills the house while it bakes is reason enough to keep this recipe on repeat, but the real magic is in that first slice, still warm, butter. 1 1/4 cups sugar

I love how easy it is to mix together—no yeast, no long waits. Just flour, sugar, butter, raisins, buttermilk, and a few pantry staples come together to make something that feels like a little celebration. It’s the kind of bread you can whip up on a whim when friends stop by, or when you simply want to treat yourself to a cozy morning.


For me, this loaf is more than a recipe. It’s part of the rhythm of my Saturdays. I imagine my Irish grandmothers watching over me as I mix it…remembering to splice a cross into the dough to “let the fairies out”. The sound of the oven timer, the golden crust cracking as I slice into it, and the way it pairs perfectly with slow mornings and second cups of tea.


If you’ve never tried Irish Soda Bread, this might be your sign. It’s hearty enough to stand alone, but also lovely with a drizzle of honey, a little jam, or even alongside eggs and bacon. And don’t be surprised if it becomes your weekend tradition too.


Because sometimes the best breakfasts are the simplest—made with love, shared with family, and savored one warm slice at a time.


Irish Soda Bread Recipe




Ingredients



  • 4 1/2 cups flour
  • 1 1/4 cups sugar
  • 2 1/2 teaspoons baking powder
  • Dash of salt
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 2 1/2 cups raisins
  • 2 cups buttermilk
  • 1/2 cup heavy cream
  • 1 large egg
  • 1/3 cup raw sugar






Instructions



  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and baking soda.
  3. Cut in the softened butter until the mixture resembles coarse crumbs.
  4. Stir in the raisins.
  5. In a separate bowl, whisk together the buttermilk, heavy cream, and egg.
  6. Add the wet mixture to the dry ingredients and stir until just combined. The dough will be sticky.
  7. Transfer the dough into a greased or parchment-lined baking pan (traditionally a round pan).  Sprinkle top with raw sugar.
  8. Bake at 350°F for 60–75 minutes, or until a toothpick/wooden skewer inserted in the center comes out mostly dry.
  9. Allow to cool before slicing. Best served warm with butter.  will be sticky.

The Corn and Beans Star Quilt

This week I submitted one of my favorite quilt projects to be quilted—the Corn and Beans Star Quilt. This design has such a special story behind it, and I’m thrilled to finally see it come to life in fabric form.


Several years ago, I was asked by The Corn Wagon in Springville, Utah, to design a logo for their store. They wanted something that reflected the classic Corn and Beans quilt block but with a fresh twist that tied in a star motif. I loved the challenge and began sketching. By shifting the angle of just a few blocks, the Corn and Beans Star was born. I painted the design for them, and to this day, it remains the logo for their shop—a beautiful nod to tradition and creativity.

Since then, I’ve wanted to transform the design from paint into fabric. This month, I finally stitched it together into a quilt top. It’s now off to be quilted, and I can hardly wait to see it completed and wrapped around someone I love. There’s something so magical about watching a design evolve from a painted board to a stitched quilt—it feels like the story of the block comes full circle.

I’m currently writing instructions so quilters can create a fabric quilt block of the Corn and Beans Star themselves. Until those are ready, you can still enjoy this design in its original painted form. 🍓 The Raspberry Fairy Dutch Baby

Three summers ago, we carved a small, enchanted world into the edge of our meadow—a fenced fairy garden planted with the flowers and berries our mountain deer love most. We laid winding stone paths, built a tiny waterfall that babbles over mossy rocks, and nestled a playhouse at the center, just big enough for little feet and big imaginations. Mushroom seats circle the garden like a fairy ring, and if you look closely, you’ll find tiny fairies hidden beneath leaves and in branches, watching quietly over it all.



This summer, the raspberries are bursting—red, ripe, and ready just in time for our grandchildren’s visit. They tiptoed into the garden this morning, baskets in hand, and came back with smiles and stained fingers, asking if I could make them a Dutch Baby with their harvest.

So we did.


This
Raspberry Fairy Dutch Baby is light and custardy with the subtle tang of sourdough and the sparkle of sun-warmed berries. It’s as magical to look at as it is to eat—especially if served under a shady tree with powdered sugar dusted like midsummer snow.

🍓 Raspberry Fairy Dutch Baby

A wild and whimsical oven-baked pancake kissed with raspberries and sourdough tang—perfect for misty mornings or fairy-lit evenings.

Ingredients

  • 4 farm eggs

  • 1 cup sourdough starter or discard

  • 3 Tbsp buttermilk

  • ¼ tsp salt

  • 1 tsp vanilla

  • 2 Tbsp maple syrup

  • 4 Tbsp melted butter (divided)

  • 1 cup fresh raspberries

Yields one 7″ Dutch Baby in a cast-iron skillet. Double for a 12″ pan.


Instructions

  1. Preheat the oven to 425°F. Place a 7″ cast iron skillet in the oven with 3 tablespoons of the butter. Let the butter melt and begin to brown while you prepare the batter.

  2. In a blender, combine the eggs, sourdough starter or discard, buttermilk, salt, vanilla, and maple syrup. Blend until smooth.

  3. When the butter has melted and the skillet is hot, carefully remove it from the oven. Swirl the butter to coat the bottom and sides.

  4. Pour the blended batter into the hot pan. Place the fresh raspberries on top in a random, fairy-scattered pattern.

  5. Bake for 15 to 20 minutes, or until the Dutch Baby is puffed and golden at the edges.

  6. Remove from the oven and, if desired, drizzle with the remaining tablespoon of melted butter. Serve warm with powdered sugar, a dollop of cream, or an extra drizzle of maple syrup.

Honey Clover Shortbread Cookies

This week in the garden and the kitchen, we’ve been gathering inspiration from the fields—where wild clover sways and the bees hum through golden days. Inspired by those sweet meadows, we’re sharing one of our favorite early summer treats: Honey Clover Shortbread Cookies.



Buttery and delicate, with just a touch of golden honey, these little cookies are as simple to make as they are lovely to share. Whether you’re baking for a tea party, a picnic basket, or a quiet afternoon treat, they’re sure to carry a little wild sweetness in every bite.

We added a sprinkle of edible clover blossoms for a little folk-art charm, but they’re just as lovely plain. Each one is a little reminder of the beauty found in the small things—sunlight, blooms, and honey on the tongue.




As I rolled the dough and pressed each cookie into shape, I kept thinking of the clover in the fields and the gentle hum of bees nearby. It felt like more than a recipe—it felt like remembering something. 





That’s when the words for Where the Clover Grows came to me, a little poem to tuck alongside the cookies. Both are small and sweet, made from simple things: flour, butter, honey… and memory. 

I included the poem as a printable card, so you can share it with a plate of cookies or pin it in your journal as a quiet reminder that beauty grows wild and sweet where we take the time to notice.
