Cherry Sweet New Year

I hope you had a wonderful first week to the new year.  It was a crazy busy week for us and honestly I am glad it is past and that I have a weekend to pack up all of the Christmas decorations, clean the garage and house and enjoy the sunshine. Before I pack up Christmas 2011 I wanted to share my favorite cherry treat that I enjoy clear through January.  



Cheery Cherry Sweet Dots

1 Cup Powdered Sugar
1 Cup Butter
2 Teas. Maraschino Cherry Juice
1/2 Teas. Almond Extract
1/2 Teas. Vanilla Extract
6 Drops of Red Food Coloring
1/2 Teas. Salt
3/4 Cup Maraschino Cherries, chopped
2 1/4 Cup White Flour
4 Dozen Cherry Cordial Kisses

Mix powdered sugar, butter, cherry juice, almond and vanilla extracts and food coloring, mix well.  Add flour and salt and mix well.  Stir in chopped cherries and shape into 1 inch balls.  I use a mini ice cream scoop.  Place on a greased cookie sheet and bake at 350 degrees for 8 to 10 minutes.  When you remove from the oven, lightly squish a cordial cherry Hershey kiss into the center of each cookie.  Let cool and enjoy with a cup of hot cocoa.

I'm off to get a little take out and start packing up the lights and decorations.  I will miss the festive look, but I am so ready for spring.  Maybe it is the heat wave we have had the past two weeks!  I hope you have an extra cheery weekend!
