We have had fabulous fourth of July....one of our favorite weekends here in Utah as there is so much to do and see. We went to see balloons lift off...fireworks beyond dreams...food galore...the grand parade...and our family BBQ! I was searching for the best dessert I could make and created a Strawberry Lemonade Cake and made Oven Fried Chicken...to die for!
Strawberry Lemonade Cake
1 White Cake Mix
1 Can Frozen Lemonade
1 Large Box Strawberry Jello
3 Egg Whites
Vegetable Oil
1/4 Cup Butter, Softened
4 Cups Powdered Sugar
1/4 teaspoon Lemon Extract
Milk
1 Large Tub of Cool-whip
Strawberry Preserves
Fresh Strawberries, Washed and Dried
Fresh Blueberries, Washed and Dried
Make cake batter according to directions substituting water for lemonade. Make the lemonade with half the water to make it strong. This will give your cake batter a wonderful lemon flavor. Bake according to instructions on mix using two 8-9 inch rounds. Make sure you spray the pan with plenty of non-stick spray and place a wax paper circle in the bottom before baking.
While the cake was baking prepare the jello with using hot water and not the cold. The jello should be thick and strong as the lemonade was. Once the cakes are done...poke holes in the cake using a fork....poke all over. Pour the strawberry jello over the cake and chill in refrigerator for one to two hours.
Wash and slice the strawberries. Wash the blueberries and pat dry.
Make the frosting by whipping the butter, powdered sugar, lemon extract together...add a little milk to make a creamy frosting. Fold in cool whip to make the frosting extra light.
Place one of the cakes on a cake stand and spread a think layer of the lemon cream frosting across the top and layer with strawberry preserves. Place top cake on the cream and preserves and frost the rest of the cake with the remaining lemon cream frosting. After you are finished frosting it...place in fridge to keep it cool.
Just before serving garnish with fresh strawberries and blueberries. We garnished ours with sparklers to make it extra festive for the Fourth of July. It was so delicious.... the perfect dessert for picnic on a hot day!
