Saturday Morning Crepes

This is a short but very "sweet" post.  We have a ton to do today to get ready for our son's wedding (two weeks for today), get some orders to the city, and welcome our nephew home from his mission....so we needed something sweet, easy, and quick for breakfast...crepes!


Mama's French Crepes

1 1/2 Cup Flour
1 Tbsp. Sugar
1/2 Tsp. Baking Powder
1/2 Tsp. Salt
2 Cups Milk or Vanilla Almond Milk
2 Large Eggs
1 Tsp. Vanilla
2 Tbsp. Melted Butter

Measure flour, sugar, baking powder, and salt into a bowl.  Stir in remaining ingredients.  Beat until smooth.  For each crepe:  Butter a non-stick skillet and heat until the butter bubbles.  Pour a small amount 1/4 cup of batter onto the pan.  Rotate the pan so the batter covers the bottom of the pan.  Cook until light brown and carefully turn to other side.  Cook until the other side is lightly browned.


Fill with your favorite fillings.  Our family's favorites are berries and cream, bananas with Nutella and REAL maple syrup...powdered sugar...etc., etc., etc!!!
