Petite Pies for Presidents Day

Our family loves pie!  Pecan pies, apple cranberry pie, strawberry pie.....but we especially love cherry pies and any holiday where we can have an excuse to make a pie is fabulous!!!  President's Day never passes without a cherry pie.  Of course it is to remember the story of President Washington chopping down the cherry tree....but really it is about the pie.

Petite Cherry Pies

We made these with using my favorite pastry recipe and canned cherry pie filing.  It was super easy and super fun to make.

Perfect Pastry Recipe

3 Cups All-Purpose Flour
1 Teaspoon Salt
1/2 Cup Cold Butter, Cubed
1/2 Cup Cold Butter Flavored Shorting
1 Egg
2 Teaspoons of Vinegar
Ice Water

In a food processor add flour, salt, and cubed shorting and butter.  Cut the  butter and shorting into flour on pulse setting until it is mixed together...until it is crumbly.

Whip the egg and add to flour mixture...add vinegar and while the processor blades are turning add the ice water  a teaspoons at a time...in a drizzle until the the dough forms into a ball.  Don't over process the dough....do not knead.

To make the petite pies roll out the dough on a floured counter and cut out two large hearts with a cookie cutter.  Place on a greased jelly roll pan.   Fill with a few tablespoons of filling.

Brush with a some egg white around the edges.  Place the top pie piece on the filling and using a fork, crimp-er or your finger....crimp the edges together.  Bake at 350 degrees for 20 to 25 minutes or until light golden brown.   Remove from jelly roll pan and let cool.

Once cooled pipe some Cream Cheese Frosting on the tops and enjoy!

Cream Cheese Frosting

One Pound of Cream Cheese
2 Sticks of Butter
1 Tablespoon of Real Vanilla
4 Cups of Powdered Sugar
About 1 Tablespoon of Milk

Place all ingredients (except for the milk) into a mixer and whip on high speed until well blended.  Slowly add the milk until you get the consistency that you desire.

I hope your family enjoys these little pies as much as we did.  So yum and fun to make...it will be a great way to celebrate the birth of President George Washington and satisfy your sweet tooth!

All Joy,

Abby
