The snow and cold has me determined to bring color to spring and my home....so I broke out my summer samples and patterns and thought I would share a row of sweet colorful flowers with you.....

Carrot Cake Is A Vegetable...Right?

Easter is past and I think I must have eaten enough marshmallow eggs to turn me into a bunny...but I did eat a few things from the vegetable group.... scalloped potatoes, asparagus, and my personal favorite...Carrot Cake!


One of my grandmothers owned a restaurant in New York, which I worked in as a teenager.  She had an award winning recipe for Pineapple Carrot Cake that people would come in for every Thursday.  It is the most moist and delish carrot cake I have eaten in my 44 years! The secret to this incredible cake is a buttery toffee sauce that is poured over the cake as it comes out of the hot oven.  When it cools and you top with a cream cheese frosting...every bite melts with buttery sweetness.


Grandma's Pineapple Carrot Cake

2 Cups Flour
2 Teas Baking Soda
2 Teas Cinnamon
1/2 Teas Salt

Sift dry ingredients together and set aside....

3 Eggs
3/4 Cup Oil
3/4 Cup Buttermilk
2 Cups Sugar
2 Teas Vanilla

Mix well.  Add the dry ingredients and mix well.

1 8 0z. Can of Crushed Pineapple
2 Cups Shredded Carrot
1 Cup Flaked Coconut
1 Cup Chopped Nuts

Add pineapple, coconut, carrot and nuts and mix well.  Pour into a greased 9" x 13" glass cake pan and bake a t 350 degrees for approximately one hour or until a toothpick comes out clean.  Prepare glaze....

Buttery Glaze

1 Cup Sugar
1/2 Teas Baking Soda
1/2 Cup Buttermilk
1/4 Pound Butter
1 Tablespoon Corn Syrup
1 Teaspoon Vanilla

Combine all ingredients and boil for 1 minute.  Remove cake from oven and while hot, pour glaze over cake.  Cool completely.  Frost with Cream Cheese Frosting.

Cream Cheese Frosting

1/4 Pound Butter
1 8oz. Package Cream Cheese
2 Teaspoons Vanilla
2 Cups Powdered Sugar

Combine butter and cream cheese.  Add vanilla, powdered sugar and beat until think and smooth.  Frost over cooled cake.

Here Comes Peter Cotton Tail

Only a few more days till the Easter bunny peeks his ears around the corner with lots of treats for all.... and one of my early treats was getting my first of four season wool patterns stitched and framed!

Blooming All Around

The sunshine is pouring down and we finally have one daffodil blooming in my flower bed!  Spring in Woodland Hills is a little slower to come...but every day with sunshine is a celebration. I have had four days off work to play with my kids for Spring Break...which meant a lot of exploring and a little time to create...


Spring

I am working on a collection of seasonal wool mini-designs.  This is the spring in process and will be posted here and on Etsy tomorrow..with the summer later this week.  It is fun to make something small that you can whip up in a weekend especially when you are a busy Mom who like to play.


We have a son on a mission who is leaving for Korea in a week...and we had the chance to go see him for a couple of minutes today...so we took a family walk to see him one last time!  The best part of the weekend!!!


Michael and Mom

I am not a Mom who cries much when her kids leave home or get married and I couldn't be happier to have Michael serving a mission....we send him weekly packages and emails and know he is happy and is doing well...

So when I was told I could see him for two minutes I couldn't pass it up....and in a group of 60 missionaries two hundred feet away I could pick out my boy now a man...looking handsome and so happy.  He has "bloomed" into a man and I am so happy to see him ready to leave for Korea.

Michael got to see his new nephew Nick and Nick got to see the sunshine and flowers for the first time....

It was a wonderful day for all of us to see our young missionary who has grown up in the last few months training and learning the Korean language.  We got to meet his companions and the Korean's that are in his group heading off to Korea net week.  I don't think you could have found a happier better group of young people anywhere in the world.  My heart is happy!

So, now we are home...eating my husband's barbecue, watching Harry Potter and the Deathly Hollows...and finishing a little wool bunny project!!!  Life is good and blooming all around!


Raspberry Heaven

Anyone who has spent a birthday weekend with me knows that my absolute favorite dessert is Kneaders Bakery Raspberry Bread Pudding....I also love their Turkey Cranberry Salad...so something healthy and then the most sinful dessert in the world!

Kneaders Raspberry Bread Pudding

Yesterday I had a hair appointment with one of our family friends and he was working on another girl while I was there.  We had a fabulous time getting to know each other...especially when you sit for four and a half hours together.  In getting to know her...I found out that her parents started Kneaders and she and her husband owned a couple of them.  Of course we started talking about our favorite Kneader's specialties which of course included my favorite the Raspberry Bread Pudding!

She then proceeded to tell me she had a blog with my favorite Kneaders recipes on it....(heavenly angels singing in the background) her blog is www.stressedspelledbackward.blogspot.com.....fabulous!!!  I made a friend...got new highlights and found heaven on my fork!  


Kneaders Raspberry Bread Pudding


Bread Mixture
Ingredients: 

1 1/2 loaves aged, white bread

1 quart heavy cream

3 cups sugar
1 egg
1 teaspoon vanilla



Directions:
In large bowl combine cream, sugar, egg and vanilla. Cut bread into 1 1/2" cubes and add to cream mixture, coating bread well. Let stand 30 minutes stirring every 5 minutes to allow cream to absorb completely. Careful not to break bread cubes apart. 

Fruit Filling
Ingredients:

5 cups frozen raspberries

1 cup sugar

1/2 cup apple juice


Directions:
Combine raspberries, sugar and apple juice, stirring until sugar is dissolved.
Layer a 9x13 dark baking dish 3/4 full with bread mixture, pour fruit filling over bread mixture, spreading evenly, top with remaining bread ( I save my best looking bread cubes for the top). Bake 40 minutes at 375 degrees. Serve warm. Top with vanilla sauce.


VANILLA SAUCE
Ingredients:

1 1/3 cup butter

5 tablespoons flour

3 cups heavy cream
2 teaspoons vanilla
1/3 cup sugar


Over medium heat melt butter, and add flour stir 10 minutes until it has a nutty aroma, do not brown. Add salt, cream and sugar and boil till mixture is thick, remove from heat adding vanilla. Serve this wonderful sauce cold.

Hippity Hoppity Easters On It's Way! ...even though it snowed all weekend and left me with 18" of fresh white snow.  So it's time to get out the bunnies and eggs and pray for spring!
